Gastronomic exhibition: forgotten national dishes

Within the framework of the festival of national traditions "Sybaga", a gastronomic exhibition of national dishes "Bereke" was held in the restaurant "Sarkyt" with the participation of representatives of Aktobe city and districts.

The purpose of the event is to popularize national dishes, get acquainted with the gastronomic traditions of the country, preserve cultural heritage, teach young people traditional recipes and culinary skills, increase their interest, as well as strengthen spiritual and cultural ties between the regions.
A special area was allocated to each district to demonstrate traditional dishes.

At the stand from the Shalkar district, special attention was drawn to the composition called "Shalkar combo", which includes natural meat products: horse meat kazy, three types of sausage, smoked chicken, as well as local containers-talkan and koumiss, packed in a special box. The finished product in vacuum packaging is presented to the market by a resident of the city of Shalkar, a private entrepreneur Aibek Sagynaev. The products under the Shalkara brand, suitable for gifts, aroused great interest among visitors.

The chefs of the restaurant "Sarkyt" also presented their culinary achievements. The special attention of the guests was attracted by the technology of cooking a hot dish "Burme karyn" (baked stomach). The meat, sealed in the stomach, wrapped in clay, was cooked by cooks over a fire from saxaul.

The volunteers demonstrated the process of stripping containers in a mortar, grinding grain and showed how a local branded product is made. Representatives of the Temir district on the big screen told about a unique dish – "orme tostik" (braided brisket).

The Mugaljarians approached the exhibition with special preparation. The guests were explained in detail the process of storing yellow oil in the stomach, cutting meat, cooking such forgotten national dishes as kuyrdak, asin (a dish of minced meat and rice).

Following the results of the exhibition, all districts were awarded in various categories, such as "Best traditional drink", "Best Regional recipe", "Best District".
